IN 2013 we got through forty litres of Spicy Apple Chutney on the fourteen courses. Here for those who have asked for it is Mr H's REcipe. (Makes about 5 litres) Put About five kilos of chopped cooking apples in a large saucepan. Add about two kilos of chopped onion, a kilo of sugar, a serving spoon of ground cloves, a serving spoon of allspice, a serving spoon of turmeric and a serving spoon of dried ginger, about ten chopped chillies ( birdseye) a dessertspoon of salt and a teaspoon of pepper. Add enough white vinegar to just cover all the other ingredients - about 3 litres- and boil/simmer for 45 minutes stirring occasionally. Warm some clean airtight jars in the oven (60 degrees ish) so that they don't break when the hot chutney is put into them and when the chutney is cooked fill them up, seal and leave to cool.
Spices are cheapest on ebay and if you buy vinegar in the supermarket for about £1.50/litre you effectively get a free chutney jar. (NB.THis process does stink! Young miss HAyden - the one who is in charge here - insists I do it in the garden on a gas burner).
